Single Serving // Red Velvet Mug Cake

Red Velvet Cake is such a lovely invention. I personally love cream cheese frosting on just about anything so this is an excuse to make some. Can you believe this cake is made in a mug and looks like that? It is a tad crazy. You may think to yourself that this cake is not very good (because it is made in a mug) but it seriously is absolutely incredible. This cake seriously tastes like quality red velvet cake and takes about 10 minutes to make.

CAKE INGREDIENTS
• 4 tbsp. Flour
• 4 1/2 tbsp. Sugar
• 1/8 tsp. baking powder
• 1 1/2 tbsp. Cocoa Powder
• 3 tbsp. Oil
• 3 tbsp. Buttermilk
• 1 Egg
• 1/2 tsp. Red Food Coloring
FROSTING INGREDIENTS
• 2 tbsp. Cream Cheese
• 2 tbsp. Butter
• 1/2 cup Sugar
OTHER SUPPLIES
• Large Mug. (cake rises)
• Measuring Spoons
• Spoon or Whisk
• Microwave
Mix all the ingredients for the cake in a mug (Ingredients above). Make sure to add only about 1/8 tsp. of baking powder because the more you add, the more the cake will rise which could result in a messy microwave.
Pop the mixture into the microwave for about 1 minute and 30 seconds. I added an additional 15 seconds because I couldn't tell if it was soupy at the bottom. I'm sure it wasn't but I zapped it a bit more just in case. Now it is time for the frosting.
For the frosting simply mix all the ingredients in a bowl. You can use a mixer on high to make it more fluffy but I decided not to because the mixer was dirty :(
Yummy! I personally loved this cake. It was so simple and fun to make. I'm sure you could mass produce these for a birthday party or a get together. Thanks so much for stopping in.
